The Freyja Fillèt
The Freyja Fillèt is personally prepared, trimmed and wrapped by the highly acclaimed salmon smoker Ole Hansen.
The Freyja Fillèt is finest fillet of the fish.
We chose to name this cut Freyja because the essence of this fish, in honour of it's warrior spirit and in remembrance of our Viking ancestors and their heroic endeavours, so attuned with the spirit of the salmon: coming from the sea and swimming upstream, having the courage to swim against the river when compelled to do so: when seeking the source.
Our incredibly special Freyja Fillèt is an embrace of the dual natures of flesh - taking in the loin of our Queen Maud, sweeter gentler texture and flavour, along with the King Olav loin and the firmer saltier sensations.
Freyja is the old norse for lady and the name the ancient norse warriors chose to call their most revered icon: Freyja. Daughter of Njörd, the viking sea god.
