Queen Maud Fillet
According to my Great Grandfather, the Royal fillet was the Norwegian Queen Maud's preferred choice in the 20's.
Maybe she loved the looks and the fantastic taste of a cut that favours the main muscle of the salmon? We do not know the full tale but the cut looks stunning, and it is the most beautiful cut of our salmon that will be the icon of your table.
Serving: best amongst generous glasses filled with a Vermentino or high mineral red wine
Feed: enough for 7-8 people as a starter
