The Freyja Fillet is personally prepared, trimmed and wrapped by the highly acclaimed salmon smoker Ole Hansen.

We chose to name this cut Freyja in honour of its warrior spirit and in remembrance of our Viking ancestors and their heroic endeavours attuned with the spirit of the salmon; coming from the sea and swimming upstream; having the courage to swim against the river when compelled to seek the source.
Our incredibly special Freyja Fillet is an embrace of the dual nature of flesh — combining the sweeter, gentler texture and flavour of our Queen Maud loin along with the King Olav loin and its firmer saltier sensations.
Freyja is the old norse for lady and the name chosen by ancient norse warriors to call their most revered icon: Freyja, daughter of Njörd, the Viking sea god.
Serving: thick slices on wood plates with fresh berries or clementine boats on the side
